West Bengal has extremely hot and humid summers. This is made especially during the summer season as it is very refreshing and light. It is known as shoji morich jhol where shobji refers to veggies, morich is pepper (combination of black pepper and chillies) and jhol is a light broth. You can use any veggies of your choice and you do not need to stick to the quantities of veggies I used.
Ingredients - Serves 6 to 8
For the bora -
* 1/2 cup/135 gm yellow split peas (matar ki dal)/Bengal Gram Dal (chana dal)
* 1/2 tsp turmeric powder (haldi)
* 1/4 th tsp hing (asafoetida)
* 1/2 tsp salt
* 1/4 th tsp nigella seeds (kalonji/kalojere)
For the light broth -
* 175 gm zucchini
* 195 gm eggplant
* 110 gm carrots
* 100 gm green beans
* 185 gm butternut squash/pumpkin
* 116 gm sweet potato
* 180 gm potato
* 2 to 3 whole green chillies (optional)
* 12 gm ginger / 1 heaped tsp
* 1 tsp turmeric powder
* 1 & 1/2 tsp salt or as per taste
* 5 cups water for the broth
* 1 tsp heaped nigella seeds/kalonji
* 10 to 12 black peppercorns
* 2 tsp panch phoron

* 2 dry red chillies
*** Points to note
* soak dal overnight
* add water little at a time while blending the dal
* whisk the dal for 5 to 8 mins very well to get light and soft boras
* the boras freeze well
* the boras soak up the broth considerably so you need a runny broth at the end
* serve it with rice or you can also have with toasted bread

    Writing this while eating this dish. Fantastic and simple recipe, I was lazy to make the aromatic spices so instead used garam masala. The gravy wasn't thickening until the 18th minute as yours and thought I messed it up however at the 20th minute, it came out very thick like yours. I will continue doing this. Thanks.

      ​@@CurriesWithBumbiI bake softer veggies like broccoli, cauliflower, zuchini, at 375 F for 25 mins. Harder veggies like potato, beets, sweet potato, raddish at 400 F for 40-45 mins. For caramelization, I move it to the top rack & broil for 2-3 mins, watching it closely. Thanks for sharing. Hope this helps:)

    Hi I absolutely love your recipes. The onion curry paste recipe is a lifesaver. I make a big batch and freeze it and use it through the week. I tried this mutton recipe in my instant pot. Everything was perfect till it was time to pressure cook. I also like the meat soft but I still set the time to 30 mins not 45. Luckily I checked after only 25 mins to find that the gravy had dried and burnt and got stuck to the bottom of the pot. Luckily the meat was not too burnt so I could salvage it. I will make a separate gravy for it using my frozen curry paste cubes. What can I do to prevent this from happening? I put 2 cups of water as well but still it dried out and burnt.

      I wonder why that happened. 2 cups of water is enough. Next time may be add another cup more of water. You can always dry off the gravy later. Hope you added hot water. Thanks for all your support

    The waste of heat energy is not good when a mesh is used. 😊 There must be a better way. If you don’t mind paying the utility company for this wasted energy then go for it. I am looking for a better energy efficient way using electric heat.

      Didn’t I show 2 ways !!!!!!! Usually rotis are puffed up on an open flame in India. I showed both the traditional method and the tawa method as well where there is less of energy wastage, so why this comment????

    ओशो ने मांसाहार और शाकाहार पर बहुत सटीक बातें कही हैं।उन्होंने कहा है कि फल और सब्जियाँ रंगदार और खुशबूदार होती हैं, वो आपको मोहक लगती हैं जबकि मांस देखने में भद्दा और बदबूदार होता है।किसी फल के बगीचे में चले जायें तो मन खिल जाता है। एक दो फल तोड़ कर खाने का मन करता है, वहीं किसी कत्लगाह में चले जाएँ तो अच्छा खासा स्वस्थ मन भी खराब हो जाए।फल या सब्ज़ी तोड़ने या काटने पर आपको कोई ग्लानि नहीं होती, उनकी पीड़ा, उनका रोना और चीखना आपको सुनाई या दिखाई नहीं देता, वहीं किसी पशु की हत्या करना हर किसी के लिए आसान नहीं होता।इसलिए देखा जाए तो प्रकृति ने आपकी इंद्रियों को ऐसा बनाया है कि जिव्हा के अलावा बाकी सभी इन्द्रियाँ मांसाहार के ख़िलाफ़ हैं।इससे आपको समझना चाहिए कि प्रकृति आपको क्या इशारा कर रही है।

    Hi Bumbi. Thanks for the clip. I tried vindaloo at an Indian restaurant for the first time and I absolutely loved it to the extent that I searched to see how it is made.     made a batch in a food processor, distractedly cooked 3 breads (while I was also cooking something else), which sat for a good half hour under paper, and then ate them; they were extremely soft and foldable. This is a winner.

      NOT AT ALL !! For egg lababdar, the eggs are poached in the masala gravy. In this recipe you need to make an omelette and then the omelette goes in the gravy. It’s totally two different recipes!!!
